01 - 8 chicken drumsticks
02 - 1 tablespoon olive oil
03 - 1 teaspoon kosher salt
04 - 1/2 teaspoon ground black pepper

05 - 2/3 cup peach preserves or jam
06 - 2 tablespoons apple cider vinegar
07 - 1 tablespoon Dijon mustard
08 - 1 tablespoon soy sauce (use gluten-free if required)
09 - 1 to 2 teaspoons hot sauce, to taste
10 - 2 cloves garlic, minced
11 - 1 teaspoon grated fresh ginger
# How to Prepare:
01 - Preheat grill to medium heat, about 350°F. If using the oven, set to 400°F.
02 - Pat the drumsticks dry with paper towels, toss with olive oil, then season evenly with kosher salt and black pepper.
03 - Combine peach preserves, apple cider vinegar, Dijon mustard, soy sauce, hot sauce, minced garlic and grated ginger in a small saucepan; heat over medium, stirring until smooth and slightly thickened, about 3 to 5 minutes. Remove from heat and keep warm.
04 - Arrange drumsticks over direct medium heat and grill for 25 to 30 minutes, turning every 5 to 7 minutes so they cook evenly and the skin browns. Cook until an instant-read thermometer inserted into the thickest part reads 165°F.
05 - During the final 10 minutes of cooking, brush drumsticks generously with the peach glaze; turn and re-glaze several times so the surface becomes sticky and caramelized.
06 - Remove drumsticks from the heat and let rest 5 minutes to redistribute juices. Serve hot with extra glaze on the side if desired.
