# What to Use:

→ Pasta

01 - 14 oz linguine
02 - Salt for pasta water

→ Bacon & Sauce

03 - 7 oz bacon, diced
04 - 2 tbsp olive oil
05 - 3 cloves garlic, finely chopped
06 - 1/2 tsp freshly ground black pepper
07 - 1/4 tsp red pepper flakes (optional)
08 - 1/2 cup reserved pasta cooking water

→ Finishing Touches

09 - 1.5 oz grated Parmesan cheese
10 - 2 tbsp chopped fresh parsley
11 - Lemon zest from 1/2 lemon (optional)

# How to Prepare:

01 - Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
02 - Heat olive oil in a large skillet over medium heat. Add diced bacon and cook, stirring occasionally, until crispy and golden brown, about 6-8 minutes.
03 - Reduce heat to low. Add chopped garlic, black pepper, and red pepper flakes if using. Sauté for 1 minute until fragrant, taking care not to burn the garlic.
04 - Add drained linguine to the skillet with bacon. Pour in 1/4 cup reserved pasta water and toss thoroughly to coat. Add more water as needed to create a creamy, glossy sauce.
05 - Remove from heat. Add grated Parmesan and toss until melted and sauce becomes silky. Stir in chopped parsley and lemon zest if desired.
06 - Serve immediately, topped with extra Parmesan and additional cracked black pepper.

# Expert Advice:

01 -
  • The sauce magically forms from just pasta water and cheese, so you always have the ingredients on hand for those nights when the fridge looks empty.
  • It comes together in the time it takes to boil water and cook pasta, making it faster than ordering takeout but infinitely more satisfying.
02 -
  • Never rinse the pasta after draining or youll wash away the precious starch that creates the silky sauce.
  • The sauce will continue to thicken as it sits, so add a splash more pasta water just before serving if its been waiting a few minutes.
03 -
  • Cook the pasta for exactly one minute less than the package directions, as itll continue cooking when tossed with the hot bacon mixture.
  • Save a full cup of pasta water rather than just half, giving yourself extra for adjusting the consistency of the sauce as needed.
