02 - 1/3 cup cottage cheese (preferably full fat)
03 - 1 tablespoon milk or cream

04 - 1/4 teaspoon salt
05 - 1/8 teaspoon freshly ground black pepper

06 - 1 tablespoon unsalted butter
→ Optional Add-ins
07 - 1 tablespoon chopped chives or parsley (for garnish)
# How to Prepare:
01 - In a medium bowl, whisk eggs, cottage cheese, milk, salt, and pepper together until smooth and slightly frothy.
02 - Melt butter in a nonstick skillet over medium-low heat until it bubbles lightly.
03 - Pour mixture into the skillet and let it settle for 20 seconds without stirring, then gently stir from edges to center with a spatula.
04 - Continue cooking, occasionally stirring, until eggs are just set but remain soft and creamy, approximately 2 to 3 minutes.
05 - Remove skillet from heat immediately and transfer eggs to plates. Garnish with chopped chives or parsley if desired. Serve warm.
