Colorful Mediterranean veggies arranged with creamy dip for a stunning party platter.

# What to Use:

→ Dips

01 - 1 1/2 cups hummus or Greek yogurt dip

→ Vegetables

02 - 1 cup cherry tomatoes, halved
03 - 1 cup cucumber, cut into sticks
04 - 1 cup assorted bell peppers, sliced into strips
05 - 1 cup carrots, peeled and cut into thin sticks
06 - 1/2 cup radishes, thinly sliced
07 - 1/2 cup snap peas, trimmed

→ Garnishes

08 - 2 tablespoons fresh parsley, chopped
09 - 1 tablespoon olive oil, for drizzling
10 - 1 teaspoon smoked paprika or za'atar (optional)

# How to Prepare:

01 - Spoon the hummus or yogurt in a wide, winding line down the center of a large flat serving platter, shaping it smoothly with the back of a spoon to resemble a river.
02 - Place the vegetable sticks and slices in branching lines radiating from the platter edges towards the central dip, alternating colors and shapes for an appealing river delta effect.
03 - Drizzle olive oil over the dip and dust with smoked paprika or za'atar if desired.
04 - Sprinkle chopped parsley over the platter to complete the presentation.
05 - Present the platter at once with additional vegetables or pita chips on the side, if preferred.

# Expert Advice:

01 -
  • It looks like you spent hours on presentation when it actually takes twenty-five minutes, making you the hero of any gathering
  • Every vegetable stays crisp and fresh because there's no cooking involved, so it's naturally healthy without feeling like a sacrifice
  • The river delta concept is so unique that people actually talk about your platter long after the party ends, I promise
02 -
  • Pat all your vegetables completely dry before arranging, or moisture will bead up on the platter and make everything look less fresh and vibrant. This one lesson changed my entire relationship with vegetable platters.
  • The dip needs to be thick enough to hold its shape but soft enough that it spreads easily. If your hummus is too thick, thin it with a tablespoon of water or lemon juice. If yogurt is too thin, drain it in cheesecloth for ten minutes. The consistency makes or breaks the visual impact.
  • Arrange everything at the last possible moment before serving, because even hardy vegetables will start to release moisture and lose their crisp edges within thirty minutes. The beauty of this dish is its freshness, and that window is precious.
03 -
  • Make a template by arranging everything while the vegetables are still in the fridge, then transfer the whole platter to serve. This way you can perfect your design without stress and everything stays cold until the last moment.
  • Cut vegetables on the diagonal when possible—it creates longer lines that flow better toward your central river and makes everything feel more intentional and elegant
